Mozzarella in the batter and queso fresco sprinkled on top make for the ultimate, deliciously cheesy dinner that’ll leave you as arepa-obsessed as us.

    Drain diced tomatoes, discarding juices (this prevents soggy arepas!). Rinse cilantro and roughly chop leaves, discarding stems. Halve 1 lime; cut remaining lime into wedges for serving. Peel onion and cut into small dice.

  2. Mash Avocado

    Mash Avocado

    Halve avocado and discard pit. Using a spoon, carefully scoop out flesh into a medium bowl, discarding skin. Add half of cilantro and juice of 1 lime, and season with ¼ teaspoon salt and pepper as desired. Mash with a fork until fully combined, then set aside until ready to serve.

  3. Make Arepa Dough

    Make Arepa Dough

    In a large heatproof bowl, stir together masa harina, mozzarella, and ¼ teaspoon salt to combine. In a small pot, combine butter, milk, and ¼ cup water, and place over medium-high heat. Cook until butter is melted and small bubbles form around the surface, 2-3 minutes. Pour warmed milk mixture into bowl with masa mixture and whisk to combine. Set aside to stiffen slightly. Meanwhile, pat beef dry with paper towel for the next step.

  4. Brown Beef

    Heat 1 tablespoon olive oil in a medium pan over medium-high heat. When oil is shimmering, add spice mix, onion, beef, ½ teaspoon salt, and pepper. Cook, breaking up, until meat is lightly browned, 3-4 minutes. Using a slotted spoon, transfer beef to a plate. Discard almost all excess fat from pan, leaving behind a thin layer and placing over medium heat. Add drained tomatoes. Cook, stirring, until broken down and slightly softened, 8 minutes.

    While tomatoes cook, heat 2 tablespoons olive oil in a large nonstick pan over medium-high heat. When oil is shimmering, add ¼ cup arepa dough at a time, and flatten slightly using the back of a spoon or spatula. Fry until browned on bottom, about 4 minutes. Flip, reduce heat to medium, and fry until cooked through, 4 minutes more. Transfer arepas to a paper towel-lined plate. Cover loosely with foil to keep warm.

  6. Plate Beef and Cheese Arepas

    Return beef to pan with tomatoes, still over medium heat, and stir to warm through, 2-3 minutes. Taste and add salt and pepper. Divide arepas between serving plates, spread with avocado mash, and top with beef. Sprinkle over queso fresco and remaining cilantro. Serve with lime wedges for squeezing over. Dig in!
