Here, Chef Elana is slathering brioche slices with butter and cinnamon sugar, then layering on gooey Brie and creamy ricotta.     Cooking Steps

      Set butter aside to soften at room temperature (we recommend at least 10 minutes—but if you want to speed up the process, gently warm the packets between your hands). Thinly slice Brie.

    2. Make Cinnamon Butter

      In a small bowl, using a fork or your fingers, mash together sugar, cinnamon, and softened butter until smooth and fully combined.

      Place bread slices on a clean, dry surface. Spread cinnamon butter in an even layer on 1 side of each bread slice. 

    4. Assemble Grilled Cheese

      Assemble Grilled Cheese

      Flip bread slices and spread ricotta evenly over plain sides. Top 2 ricotta sides with Brie and finish with remaining bread slices, cinnamon sugar–side up. 

    5. Cook Grilled Cheese

      Cook Grilled Cheese

      Place a large nonstick pan over medium heat. Carefully hover your hand a few inches away from the pan—when you can easily feel heat, add sandwiches. Place a medium heavy pan or large plate on top to weight down. Cook until bread is golden brown and cheese is melted, 3-5 minutes per side.
