Chocolate Peanut Butter Pies with Whipped Cream

- 2 ouncesdark chocolate

Set aside cream cheese and peanut butter to soften at room temperature. Roughly chop peanuts.
Reserve 2 tablespoons heavy cream in a small heatproof bowl for Step 4. Remove chilled bowl and whisk from refrigerator and whip remaining cream and powdered sugar until thickened and soft peaks form. Set aside.
Make Peanut Butter Filling
In a medium bowl, combine granulated sugar, vanilla extract, cream cheese, peanut butter, and ⅛ teaspoon salt. Stir until very smooth and fully combined. Add half of whipped cream into bowl with peanut butter filling, and gently fold until fully combined. Reserve remaining whipped cream in refrigerator until ready to serve. Spoon peanut butter filling into graham cracker crusts, dividing evenly. Place in refrigerator to chill for 10 minutes.
While peanut butter pies chill, add chocolate to bowl with reserved 2 tablespoons cream and microwave in 30-second intervals until chocolate has melted. Stir to fully combine chocolate and cream.
Once pies have chilled, spoon melted chocolate on top of chilled pies and return to refrigerator to set, 10 minutes more (P.S. This is a great time to catch up on dishes!).
Plate Chocolate Peanut Butter Pies
Dollop reserved whipped cream over chocolate peanut butter pies and garnish with chopped peanuts. Enjoy your dreamy dessert!
