What You’ll Need
- 12" large pan
Prepare IngredientsPeel onion, halve, and thinly slice. Wipe mushrooms clean with a damp paper towel and roughly chop caps, discarding stems. Rinse remaining produce. Slice broccolini crosswise into 2-inch pieces. Quarter sweet potato and thinly slice crosswise. Halve tomatoes. Tear basil leaves into bite-size pieces, discarding stems. Pat sausage dry with paper towel and cut on a diagonal into 1-inch slices.
Sear SausageHeat 1 tablespoon olive oil in a large pan over medium-high heat. When oil is shimmering, add sausage in a single layer and cook until browned on outside and cooked through, about 2 minutes per side. Transfer to a plate and set aside.
Stir-Fry Sweet PotatoWipe pan from sausage clean and add 1 tablespoon olive oil over medium-high heat. When oil is shimmering, add sweet potato and cook, stirring, until golden and almost tender, 5-6 minutes.
Stir-Fry VegetablesAdd onion, mushrooms, broccolini, and 1 tablespoon olive oil to pan with sweet potato over medium-high heat. Season with ½ teaspoon kosher salt and pepper. Cook, stirring, until vegetables are tender, 4-5 minutes.
Season Stir-FryAdd spice mix, tomatoes, and sausage to pan with vegetables and cook, stirring, until warmed through, about 2 minutes. Remove pan from heat. Add basil and stir to wilt. Taste and add more salt and pepper as needed.
