Our chicken Marsala gets so many rave reviews, it has easily earned its spot in the Plated Hall of Fame. Here, we're channeling the same mouthwatering flavors into a pizza. We pan-roast chicken breasts, then shred and combine with Marsala wine, mushrooms, and creamy mascarpone. It's spooned over pizza dough, then topped with mozzarella and baked until the crust is golden and the cheese is bubbling.

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Preheat oven to 425ºF. Remove pizza dough from bag and let soften at room temperature. Wipe mushrooms clean with a damp paper towel and cut into ¼-inch slices. Rinse remaining produce. Thinly slice chives. Strip rosemary leaves, discarding stems, then mince. Mince garlic. Line a baking sheet with parchment paper and rub with 1 teaspoon olive oil.

  2. Sear chicken

    Pat chicken very dry with paper towel and season all over with ½ teaspoon salt and pepper as desired. Heat ½ tablespoon olive oil in a medium high-sided pan over medium-high heat. When oil is shimmering, add chicken skin-side down and sear until skin is golden and easily lifts from pan, 5-7 minutes (it will finish cooking in Step 4).

  3. Par-bake crust

    While chicken sears, sprinkle flour onto a clean, dry surface, coating a rolling pin or your hands with a thin layer. Roll or stretch dough into a rectangular shape, rotating frequently and working from center to edges, until ¼-inch thick. Add dough to prepared sheet, gently stretching to reach edges of sheet, and rub 2 teaspoons olive oil on top. Bake until crust is lightly browned and beginning to crisp, 9-11 minutes.

  4. Finish chicken and mushrooms

    Once skin is golden, flip chicken, still over medium-high heat; scatter around mushrooms in pan. Cook until chicken is no longer pink and mushrooms are tender, 5-7 minutes. Transfer chicken to cutting board; set aside to rest for 5 minutes, leaving mushrooms behind in pan. Add Marsala wine, rosemary, and garlic to pan. Cook, stirring occasionally, until liquid has mostly evaporated, 2-4 minutes more. Season with ⅛ teaspoon salt and pepper; remove pan from heat.

  5. Assemble and bake pizza

    Cut rested chicken into ¼-inch slices, removing chicken skin if desired. To pan with mushrooms, still off heat, stir in mascarpone and sliced chicken to combine. Spread chicken Marsala evenly over pizza crust, leaving a ½-inch border. Scatter over mozzarella. Bake until crust is crisp and cheese is bubbling, 8-10 minutes.
