Why does chicken get to have all the tikka masala fun?! This repeat recipe swaps cauliflower for the traditional poultry, with sensational, plate-licking results. The cauliflower florets are battered and baked until crispy, then coated in the seriously addictive tikka masala sauce. A side of garlicky naan and ginger-infused sautéed spinach round out this better-than-takeout dinner.

  1. Prepare ingredients and make batter

    Prepare ingredients and make batter

    Preheat oven to 450ºF. Rinse spinach and pat dry with paper towel. Rinse cauliflower and cut into 1-inch florets, if needed. Trim and discard skin of ginger. Peel shallot and thinly slice into rings. Mince garlic. In a large bowl, whisk together flour, ½ cup water, and ¼ teaspoon salt to make batter.

    Line a baking sheet with parchment paper and coat with ½ tablespoon canola oil. Add cauliflower to bowl with batter and toss to coat. Using a slotted spoon (to allow excess batter drip off), transfer cauliflower to prepared baking sheet and arrange in a single layer. Bake until golden brown, 22-25 minutes, then let cool on baking sheet for 5 minutes. Loosen from parchment and set aside.

  3. Make garlic naan

    While cauliflower bakes, line a separate baking sheet with foil and arrange naan on top. Heat half of butter in a large pan over medium heat. When butter is foamy, add half of garlic and cook until fragrant, 1 minute. Pour garlic butter over naan, spreading to fully coat. Reserve pan for next step. Add naan to oven with cauliflower and bake until crisp and fragrant, 5 minutes, then stack naan, and wrap in foil from baking sheet. Set aside until ready to serve. 

  4. Simmer tikka masala sauce

    Simmer tikka masala sauce

    Return pan from garlic butter to medium heat. Add curry paste and remaining garlic. Cook, stirring frequently, until fragrant, 1 minute. Whisk in tomato purée to fully combine. Increase heat to high and bring to a boil, then reduce heat to medium and simmer until thickened and slightly reduced, 3-4 minutes. Remove pan from heat. Whisk in 2 tablespoons heavy cream. Season with ¼ teaspoon salt and pepper as desired.  

  5. Sauté spinach

    Sauté spinach

    Heat remaining butter in a separate large pan over medium heat. When butter is foamy, add whole ginger knob and shallot and cook until softened, about 3 minutes. Add spinach to pan and cook, stirring, until just wilted, 3 minutes more. Remove whole ginger knob and discard. Season with ¼ teaspoon salt and pepper as desired. Divide spinach between serving plates.

  6. Plate cauliflower tikka masala

    Plate cauliflower tikka masala

    Return pan with tikka masala sauce to medium heat and add roasted cauliflower, then toss to fully coat and heat through. Divide cauliflower tikka masala between plates with sautéed spinach, spooning over any remaining sauce. Tear garlic naan into large pieces and serve alongside. Dig in!
