Prepare ApplePeel apple, halve, and thinly slice, discarding core.
Make Cinnamon Whipped CreamIn a medium bowl, whisk together heavy cream and sugar mix until slightly thickened and soft peaks form, about 3 minutes. Place in refrigerator to chill until ready to use.
Dissolve Brown SugarHeat butter in a medium pan over medium-high heat. When butter is foamy, add brown sugar and stir until almost dissolved, 1-2 minutes.
Caramelize AppleReduce heat under pan with brown sugar to medium and add apple in a single layer. Cook without moving until golden on bottom, 2-3 minutes, then stir occasionally until caramelized and tender, about 2 minutes more. Remove pan from heat.
Assemble Apple TartletsSpoon caramelized apple into graham cracker crusts, dividing evenly.
