Brown Butter Orecchiette with Spicy Sausage and Peas

Small and round orecchiette pasta is tossed with spicy Italian sausage, fragrant sage, and bright green peas for a dish that’s simple, filling, and comforting. Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Bring a large pot of water to a boil over high heat. Meanwhile, thinly slice sage leaves, discarding stems. Pat sausage dry with paper towel.

  2. Cook orecchiette

    Cook orecchiette

    Season boiling water generously with salt. Stir in orecchiette and cook until al dente, 8-9 minutes. Reserve 1 cup pasta cooking water, then drain and set aside.

  3. Brown sausage

    While orecchiette cooks, heat butter in a medium high-sided pan over medium-high heat. When butter is foamy, add sausage and cook, breaking up, until browned, 4-5 minutes. Stir in sage. Remove pan from heat and set aside until pasta has finished cooking. 

  4. Finish orecchiette

    Finish orecchiette

    Once pasta is cooked, return pan with sausage to medium heat and add peas and cooked orecchiette. Cook until peas are warmed through, about 2 minutes. Add reserved pasta cooking water, 1 tablespoon at a time, scraping up browned bits from bottom of pan. Stir until pasta is coated and sauce clings to noodles, then remove pan from heat.

  5. Season orecchiette

    In a small bowl, set aside 1 tablespoon Parmesan for the next step, then add remaining Parmesan to pan with orecchiette and stir to combine. Taste and add salt and pepper as desired.

  6. Plate orecchiette

    Divide orecchiette between serving dishes, sprinkle over reserved Parmesan, and dig in!
