The days of cold leftover pizza for breakfast are long gone—have pizza in the morning, done right. This week, we’re dropping all your brunch favorites—bacon, eggs, cheese—onto a crisp pizza crust. We’ll introduce a hands-free and mess-free technique for crisping bacon in the oven, before it's crumbled over a Cheddar crust, along with sautéed mushrooms and perfectly fried eggs. Serve it with a glass of orange juice (just add Champagne, if you’re feeling festive).

    Cooking Steps

    1. Prepare ingredients

      Prepare ingredients

      Preheat oven to 425ºF. Remove pizza dough from bag and let soften at room temperature. Wipe mushrooms clean with a damp paper towel and cut into ¼-inch slices. Rinse remaining produce. Strip rosemary leaves, discarding stems, then roughly chop. Roughly chop sage leaves, discarding stems. Peel onion, halve, and thinly slice. Cut parchment paper into 2 pieces, then line 2 baking sheets. Rub 1 baking sheet with 1 teaspoon olive oil.

      Arrange bacon in a single layer on non-oiled prepared baking sheet. Bake until beginning to crisp, 13-15 minutes (move on to the next step, but don't forget to come back). Then, transfer bacon to a paper towel–lined plate to drain until ready to serve.

      While bacon cooks, sprinkle flour onto a clean, dry surface, coating a rolling pin or your hands with a thin layer. Roll or stretch dough into a rectangular shape, rotating frequently and working from center to edges, until ¼-inch thick. Add pizza dough to oiled baking sheet, gently stretching to reach edges of sheet, and rub 2 teaspoons olive oil on top. Bake, alongside bacon, until crust is crisp and lightly browned, 10-12 minutes.

    4. Sauté mushrooms and onion

      Sauté mushrooms and onion

      While bacon and crust bake, heat 1 tablespoon olive oil in a large nonstick pan over medium-high heat. When oil is shimmering, add mushrooms and sauté, stirring, until beginning to brown, about 3 minutes. Add onion and sauté, stirring frequently, until light brown and softened, 6-7 minutes more. Remove pan from heat and add half of herbs and ¼ teaspoon salt. Stir to combine and set aside for next step.

    5. Finish pizza and fry eggs

      Once crust is crisp, scatter over Cheddar and mushroom mixture in an even layer, leaving a ½-inch border. Return to oven; bake until cheese is melted, 4-6 minutes. Meanwhile, place pan from mushrooms over medium heat with 1 tablespoon olive oil. When oil is shimmering, crack 4 eggs into pan; season with salt and pepper as desired. Fry until whites start to set, 2 minutes. Cover pan; continue frying until whites are mostly set but yolks are runny, 2 minutes more.

      Roughly chop cooled bacon. Once pizza is baked, remove from oven and top with fried eggs. Sprinkle over chopped bacon and remaining herbs. Cut into wedges for serving and dig in!
