Blackened Salmon Sandwich with Kale-Fennel Slaw and Rémoulade

When it comes to fish sandwiches, why do lobster rolls get to have all the fun? Here, we’re highlighting another favorite fish, salmon, which is crusted with paprika, thyme, and cayenne, then seared until blackened, and piled onto toasty ciabatta buns. A rémoulade sauce of mayonnaise, capers, and chopped pickles adds briny creaminess to the sandwich, which is served with a crunchy kale and fennel slaw.

Cooking Steps

  1. Marinate Salmon

    Marinate Salmon

    Pat salmon dry with paper towel and place on a plate. Season all over with spice mix and ½ teaspoon salt. Set aside to marinate at room temperature until ready to cook.

    While salmon marinates, halve lemon. Rinse remaining produce. Halve fennel and cut core out in a wedge shape, then slice as thinly as possible. Stack kale leaves, trim and discard stems, and thinly slice crosswise. Finely chop capers and pickles and place in a small bowl. Slice ciabatta buns open horizontally, if they arrived whole.

  3. Toast Buns

    Toast Buns

    Drizzle olive oil over cut sides of buns. Heat a large pan over medium heat. Carefully hover your hand a few inches away from the pan—when you can easily feel heat, add buns cut-side down, working in batches as needed. Toast until light golden, 3-4 minutes. Then, flip buns and continue toasting until warmed through, 1-2 minutes more. Transfer to serving plates. Wipe pan clean and reserve for Step 5.

  4. Make Rémoulade and Slaw

    Make Rémoulade and Slaw

    While buns toast, add mayonnaise, 1 squeeze lemon juice, ⅛ teaspoon salt, and pepper as desired to bowl with capers and pickles. Stir to combine. In a medium bowl, whisk together ½ packet honey, juice of remaining lemon, 1 tablespoon olive oil, ¼ teaspoon salt, and pepper to combine. Add cabbage, fennel, and kale to bowl with dressing, and toss to coat. Set both bowls aside until ready to serve. Discard remaining honey.

  5. Blacken Salmon

    Blacken Salmon

    Heat 1 tablespoon olive oil in pan from buns over medium-high heat. When oil is shimmering, add salmon skin-side down and sear until spices on bottom are blackened, about 5 minutes. Flip salmon and cover, keeping lid slightly ajar for steam to escape. Continue searing until spice crust is completely blackened and fish is cooked through and opaque, 3-5 minutes more. Meanwhile, set the table!

  6. Plate Blackened Salmon Sandwiches

    Plate Blackened Salmon Sandwiches

    Once cooked, transfer salmon to cutting board and remove and discard skin. Cut each fillet in half, then stack and layer onto bun bottoms. Top with a dollop of rémoulade. Finish with a handful of kale-fennel slaw, serving remainder alongside. Enjoy your homemade taste of New Orleans!
