Cooking Steps

    Preheat oven to 425[degrees]F. Peel onion and cut into small dice. Strip thyme leaves, discarding stems. Rinse broccoli and break into 2-inch pieces. Pat beef dry with paper towel.
  2. Sauté Onion

    Sauté Onion

    Heat 1 tablespoon olive oil in a medium pan over medium-high heat. When oil is shimmering, add onion and thyme and sauté until onion is soft and translucent, about 5 minutes. Stir in Worcestershire sauce and tomato paste and cook until bright red, about 1 minute. Transfer to a large bowl.
  3. Form Meatloaves

    Form Meatloaves

    Add breadcrumbs, barbecue sauce, beef, and 1 egg to bowl with onion. Season with ½ teaspoon kosher salt and pepper. Using your hands, mix well. Divide mixture evenly and form into 2 loaves, about 2 x 5 inches each. Place on ½ of a foil-lined baking sheet. Spread ketchup over tops of meatloaves, dividing evenly.
  4. Season Broccoli

    Season Broccoli

    On other ½ of baking sheet, toss broccoli with 1½ tablespoons olive oil, ¼ teaspoon kosher salt, and pepper. Arrange in a single layer and sprinkle over Parmesan.
  5. Bake Meatloaves and Broccoli

    Bake Meatloaves and Broccoli

    Transfer baking sheet to oven and bake until meatloaves are cooked through and broccoli is crisp, 17-20 minutes.
