Here, chicken patties are laced with soy sauce, garlic, serrano chile, and cilantro. They're served over a salad of mixed greens and quick-pickled cucumber, radish, and carrot in a creamy Sriracha dressing.

Cooking Steps

    Prepare ingredients

    Rinse all produce. Halve radishes, then thinly slice into half-moons. Halve cucumbers lengthwise, then thinly slice crosswise on a diagonal. Pick cilantro leaves and mince stems, keeping separate. Mince garlic. Thinly slice serrano chile crosswise, discarding seeds and stem; mince half (always wash your knife, cutting board, and hands after cutting spicy chiles).

  2. Pickle vegetables

    If you have a zester and want to infuse your dressing with even more flavor, zest up to ½ of lime into a large bowl, then halve. In a medium bowl, whisk together rice wine vinegar, 1 squeeze lime juice, and ¼ teaspoon salt to combine. Add shredded carrots, radishes, cucumbers, and sliced serrano (it's spicy, so feel free to use less); toss to coat. Place in refrigerator to chill and pickle until Step 5.

  3. Form chicken burgers

    In a separate large bowl, combine soy sauce, garlic, cilantro stems, minced serrano, ⅛ teaspoon salt, and pepper as desired, then add chicken. Using your hands, mix well, then form into 2 equal patties, about 1 inch thick. Place burgers on a plate, cover with plastic wrap, and chill in refrigerator for at least 5 minutes (to help them hold their shape as they cook).

  4. Cook chicken burgers

    Once burgers are chilled, heat 1 tablespoon canola oil in a large pan over medium heat. When oil is shimmering, add burgers and sear until browned on bottom, 5 minutes. Flip, cover pan, and sear until cooked through and no longer pink, 5 minutes more. Transfer chicken burgers to a plate and set aside to rest for about 5 minutes.

  5. Make creamy Sriracha dressing

    Make creamy Sriracha dressing

    While burgers cook, to large bowl with lime zest (if using), whisk in mayonnaise, 1 packet Sriracha (if you prefer milder spice, you can use less), 1 teaspoon pickling liquid from bowl with vegetables, and juice of ½ lime to combine. Pat mixed lettuces dry with paper towel and add to bowl with dressing, waiting to toss until ready to serve.

  6. Plate chicken burgers

    Drain quick pickles, discarding pickling liquid. Toss salad and divide between serving plates, top with bánh mì chicken burgers, and scatter around quick pickles. Garnish with cilantro leaves, drizzle over remaining Sriracha, and dig in!
