    Prepare Ingredients

    Preheat oven to 425°F. Rinse all produce. Cut eggplant crosswise into ¼-inch rounds, discarding ends. Cut tomato into 4 slices total. Thinly slice mozzarella. Place flour on a large plate and season with ¼ teaspoon salt and pepper as desired. In a large shallow bowl, whisk 1 egg. Place breadcrumbs on a separate large plate.

  2. Dredge Eggplant

    Dredge Eggplant

    Rub ½ tablespoon olive oil on a baking sheet. Season eggplant all over with ¼ teaspoon salt and pepper as desired. Dredge eggplant in flour, shaking off excess. Dip in egg, allowing excess to drip off. Dredge in breadcrumbs, pressing to adhere, and add to baking sheet in a single layer. Drizzle olive oil over tops of eggplant. 

  3. Roast Eggplant and Tomato

    Roast Eggplant and Tomato

    Roast eggplant until beginning to brown, about 10 minutes. Then, flip eggplant and push to 1 half of baking sheet. Add tomato to other half of baking sheet and toss with ½ tablespoon olive oil, ⅛ teaspoon salt and pepper as desired. Return to oven to roast until tomatoes are slightly blistered and soft and breading on eggplant is golden brown, 10 minutes more.

  4. Make Tomato Sauce

    Make Tomato Sauce

    While eggplant roasts, combine tomato purée and spice mix in a small pot over medium heat. Simmer until sauce is thick and flavors have melded, about 10 minutes. Season with ⅛ teaspoon salt and pepper as desired. Remove pot from heat.

  5. Make Dressing

    Make Dressing

    While sauce simmers, pick dill and parsley leaves, discarding stems, and place in a large bowl (big enough for salad). Add red wine vinegar, 2 tablespoons olive oil, ¼ teaspoon salt and pepper as desired and whisk to combine. Add lettuce and toss to coat. Slice ciabatta buns open horizontally, if they arrived whole. Pick basil leaves, discarding stems. 

  6. Melt Cheese and Plate

    Melt Cheese and Plate

    Divide eggplant evenly into 4 stacks on baking sheet. Top each stack with mozzarella and roasted tomato. Arrange buns cut-side up on baking sheet, alongside stacks. Return to oven until cheese is melted and buns are light golden, 5 minutes. Top bun bottoms with eggplant stacks and basil, then add bun tops. Serve with salad and tomato sauce for dipping. Dig in!
