Story

Chef Michelle was inspired by the combination of apples and honey for this early-fall dessert. She’s teaching us some new techniques—like coating the baking tin with butter, then dusting with sugar to make the cake easier to invert (or flip upside-down). The result is a thin layer of caramelized apples over a cinnamon-infused cake. Then, butter, brown sugar, and honey are cooked down to create a sticky-sweet caramel sauce for drizzling.

    Cooking Steps

    1. Prepare ingredients

      Prepare ingredients

      Preheat oven to 350°F. Reshape aluminum tin, if bent, and place on a baking sheet. Unwrap 1 packet butter and place in tin for next step, then unwrap 5 packets butter, place in a large bowl, and set aside to soften at room temperature until Step 4. Set remaining 3 packets butter aside to soften until Step 6. Reserve 2 tablespoons brown sugar in a small bowl and set aside for Step 6.

      Using your fingers, rub butter inside tin to coat all surfaces evenly; discard any excess. Add granulated sugar and rotate tin, gently tapping to cover all surfaces and corners; discard any excess.

    3. Layer apple

      Layer apple

      Rinse apple and pat dry with paper towel. Slice off rounded sides of apple and thinly slice, discarding core. Arrange apple slices in a single layer in prepared tin, covering bottom as much as possible—this will be the showcase of your cake, so feel free to get a little creative with the design. Set aside. Save any remaining apple for a snack.

    4. Make cake batter

      In a medium bowl, whisk together flour, cinnamon, baking powder, and ¼ teaspoon salt to combine. To large bowl with softened 5 packets butter, add remaining brown sugar (not reserved 2 tablespoons); whisk until pale and fluffy. Add applesauce, vanilla, and 1 egg to bowl with butter and sugar; whisk to fully combine. Add half of flour mixture to bowl with butter-sugar mixture, stirring gently until just combined; repeat with remaining flour mixture.

    5. Bake and invert cake

      Pour cake batter over apple slices in tin, spreading in an even layer. Transfer baking sheet with tin to oven and bake until top springs back when touched and a toothpick or sharp knife inserted in the middle comes out clean, 25-30 minutes (this is a great time to get ahead on cleanup). Set cake aside to cool for at least 10 minutes, then run a small knife around edges to loosen. Place a large plate on top of tin and carefully flip to invert cake.

    6. Make honey caramel and plate

      Make honey caramel and plate

      Once cake is inverted, place remaining butter and reserved 2 tablespoons brown sugar in a small pot over medium heat. Cook, stirring continuously, until melted and smooth, 2-3 minutes more. Remove from heat and stir in honey until smooth, about 1 minute. Drizzle honey caramel over apple upside-down cake. Cut into squares and enjoy!
