The warmly spiced turkey patties are made juicy with a splash of apple cider and freshly grated Gala apple. Piled onto brioche buns with a sauté of Brussels sprouts, sliced apple, and onion cooked down with more cider, this dinner’s everything we want on a cool November evening.

    Halve buns crosswise. Rinse apple, halve, and remove and discard core. Thinly slice half. Using the large holes of a box grater, grate remaining half; alternatively, finely chop. Peel onion, halve, and thinly slice. Pat turkey dry with paper towel.

  2. Form Burgers

    Form Burgers

    In a large bowl, combine spice mix, grated apple, turkey, 1 tablespoon apple cider, and as much cayenne pepper as desired (it's spicy!). Season with ½ teaspoon salt and black pepper as desired. Using your hands, mix well, then form into 2 equal patties, about 1-inch thick. Using your thumb, create a dimple on top of each. Place burgers on a plate, cover with plastic wrap, and refrigerate until ready to sear.

  3. Cook Onions and Brussels Sprouts

    Cook Onions and Brussels Sprouts

    While burgers chill, heat butter and 1 teaspoon olive oil in a medium pan over medium-high heat. When butter is foamy, add onion and cook until beginning to soften, about 3 minutes. Add Brussels sprouts and cook, stirring continuously to avoid burning, until soft and beginning to caramelize, 8-10 minutes.

    Add sliced apple and remaining apple cider to pan with Brussels sprouts over medium heat, and season with ½ teaspoon salt and black pepper as desired. Cook, stirring continuously, until apple is softened and liquid has reduced entirely, about 5 minutes. Transfer hash to 2 serving plates and cover loosely with foil to keep warm.

  5. Sear Burgers

    Sear Burgers

    Heat 1 tablespoon olive oil in a medium nonstick pan over medium-high heat. When oil is shimmering, add burgers and sear until browned on bottom, 3-4 minutes. Flip and top with Cheddar, then reduce heat to medium and cover pan. Sear until cheese is melted and burgers are cooked through and no longer pink, 5-6 minutes more. Transfer to a plate and set aside to rest for at least 5 minutes.

  6. Plate Turkey Burgers

    While burgers rest, wipe pan from burgers clean and return to medium-high heat. Add buns cut-side down and toast until light golden and warmed through, 2-3 minutes. Transfer to plates with hash. Layer bun bottoms with burgers and a spoonful of hash. Spread mustard on bun tops, dividing evenly, then top burgers. Dig in!
