Zesty Citrus-Basil Potatoes


These crispy, roasted potatoes have a little extra zing from the addition of a surprising ingredient: Lemon zest. The heartiness of the potato paired with the light and zesty lemon flavor blends wonderfully with fresh basil and a touch of olive oil.

Citrus-Basil Roasted Potato Recipe

  • ¾ pound baby Yukon gold potatoes
  • 3 tablespoons basil, divided
  • 1 tablespoon olive oil
  • 1 lemon
  • 1 tablespoon salt

1. Roast Potatoes

Wash all herbs and potatoes and pat dry with paper towel. Preheat oven to 425° F. Cut potatoes into quarters. Place on a large baking sheet and drizzle with 1 tablespoon olive oil. Roast for 20 minutes, turning halfway through.

2. Prepare Citrus-Basil Mix

While potatoes roast, zest lemon and finely chop basil. In a small bowl, combine lemon zest, 1 ½ tablespoons chopped basil, and 1 tablespoon salt. Use your fingers to mix. Remove baking sheet from oven and carefully toss mixture into potatoes. Return pan to oven and roast 5 minutes more.
