When it comes to cravings, some of even the most diehard vegetarians have confessed to us that they still long for bacon every once in a while…and can you blame them? While there are ton of vegetarian substitutes out there, we’ve found that many just taste a little too fake. Our “bacon” recipe keeps it super simple—no liquid smoke or fake meat. You’ll find in the recipe and video below, you only need mushrooms and a handful of other ingredients to create a vegetarian bacon recipe that is sure to satisfy.

INGREDIENTS
5 ounces oyster mushrooms
1 tablespoon canola oil
.5 tablespoon dark brown sugar
.5 teaspoon smoked paprika
1 teaspoon smoked salt

INSTRUCTIONS
1. Preheat oven to 425 degrees.
2. In a medium bowl, stir together spices and sugar, and 1 tablespoon canola oil.
3. Place mushrooms on a foil-lined baking sheet, pour over spice-oil mixture, and toss to coat.
4. Arrange in a single layer, transfer to oven, and roast until browned and crispy, about 15 minutes.
