Our love of avocado toast will never fade, but that doesn’t mean we don’t mix it up every so often. Recently we came up with a tomato jam recipe that goes well with everything from pork to breakfast toast. Check out the recipe to learn how to make it, and watch the video for a delicious crostini recipe using tomato jam, ricotta, and basil.

¼ ounce ginger
⅛ ounce fresh thyme
1 lemon, divided
3 plum tomatoes
2 teaspoons granulated sugar or one tablespoon of honey
1 tablespoon olive oil

Prepare Ingredients:

Cut tomatoes into ½-inch dice. Pat pork dry with paper towel.

Sauté Tomatoes:

Heat 1 tablespoon olive oil in a small pot over medium heat. When oil is shimmering, add ginger and sauté, stirring, until fragrant, about 1 minute. Add tomatoes. Season with ¼ teaspoon salt and pepper as desired. Sauté, stirring, until tomatoes are softening, 3-5 minutes.

Cook Tomato Jam:

Add sugar and thyme to pot with tomatoes over medium heat and cook, stirring occasionally, until sticky and slightly thickened, 10-12 minutes. Remove pot from heat. Stir in juice of half lemon. Season with another ¼ teaspoon salt and pepper as desired.
