There’s an undying love for all things cheese in the Plated office. Goat cheese is no exception to our
obsession enjoyment of any cheese carefully curated artisan cheeses, so we were super excited when these tomato strata were featured on the menu (alongside co-founder Josh’s steak salad).
Tomato Goat Cheese Strata
- 2 tablespoons minced basil
- 2 tablespoons minced chives
- ½ shallot, minced
- 2 tablespoons champagne vinegar
- 2 small beefsteak tomatoes, sliced into 3-4 rounds
- ¼ cup goat cheese
- 3 tablespoons cream
In a medium bowl, combine chopped basil and chives, minced shallot, and champagne vinegar. Slowly pour 3 tablespoons olive oil into dressing, whisking to emulsify. Taste and season with salt and pepper as needed. Set aside.
In a small bowl, whisk together goat cheese and cream. Season with salt and pepper. Layer goat cheese mixture between tomato slices, creating 4 towers with 3 tomato slices each, or until all ingredients are used. Spoon vinaigrette over strata.
