Wild Mushroom Sauce with Red Wine
- ¾ pound wild mushrooms
- 3 sprigs fresh thyme
- ¼ cup red wine
- 2 teaspoons butter
Wipe mushrooms clean and chop. Remove thyme leaves from sprigs. Add mushrooms to pan over medium heat and cook until they begin to soften. Add thyme leaves, red wine, and 2 tablespoons water. Stir to scrape up brown bits from pan. Allow liquid to reduce by half, then add butter and stir until melted. Remove from heat.
