Smoky Fried Chickpeas Recipe
- 2 cans chickpeas
- 1 tablespoon lemon zest, in strips
- 2 tablespoons smoked paprika
- 1 sprig fresh thyme
- 4 garlic cloves, sliced
- 1 cup olive oil
- sea salt to taste
Drain and rinse chickpeas under cold water and set on paper towels over a colander to dry thoroughly.
Heat 1 cup olive oil in a large pan to 355° F or until it makes bubbles around 1 chickpea. Add lemon zest, thyme, and chickpeas to the pan in batches so it’s not too crowded. Fry for about 5 minutes or until the chickpeas are crunchy and golden brown. Remove the chickpeas from the oil and drain well over a colander. Add the garlic to the oil and fry till golden brown. Toss garlic and chickpeas with smoked paprika and salt. Serve warm.
