Things to Add to Your Mocktail Game: This Strawberry Shrub Recipe

1 cup strawberries
1 cup sugar
1 cup red wine vinegar
1 lime
club soda

Make strawberry shrub

Rinse strawberries and thinly slice, discarding stems, then place in a large bowl. Add sugar to bowl and, using a large fork or potato masher, mash until thoroughly combined. Cover bowl with plastic wrap and place in refrigerator to chill overnight (this will help the mixture macerate, infusing the sugar with the flavorful juices from the berries).

Finish strawberry shrub

Once strawberry shrub has chilled, strain shrub, discarding fruit solids (the liquid left behind should resemble syrup). Add red wine vinegar to bowl and stir to fully combine. In a small bowl, reserve 1/4 cup strawberry shrub for the next step, saving remainder in a closed glass container for your next cocktail hour.

Make strawberry mocktail

Thinly slice lime for garnish. Divide reserved 1/4 cup strawberry shrub between cocktail glasses. Top with club soda and garnish with lime slices. Cheers!
