Shakshuka With Green Garlic Pesto

Shakshuka is a popular Middle Eastern dish of eggs cooked in a thick, tomato-based sauce that is laden with spices. In some countries, it’s a popular breakfast food. Here, we’re topping it with a homemade pesto of green garlic: small, young bulbs with long stems.

Total time: 30-40 minutes

1 yellow onion
1 red bell pepper
1 poblano chile
1 can tomatoes
2 ounces green garlic
¼ teaspoon aleppo pepper
2 teaspoons smoked paprika
½ teaspoon ground cumin
2 tablespoons grated pecorino cheese
2 ounces crumbled feta cheese
4 tablespoons olive oil
4 eggs
kosher salt
black pepper

1. Prepare Ingredients
Preheat oven to 375°F. Peel onion and mince. Rinse bell pepper and poblano chile, halve lengthwise, and discard seeds. Cut into 1-inch pieces. Place tomatoes and their juices in a large bowl and crush by hand. Rinse green garlic and trim and discard root. If making pesto by hand, finely mince; if using a blender, roughly chop.

2. Cook Vegetables
Heat 2 tablespoons olive oil in a medium ovenproof pan over medium heat. When oil is shimmering, add spice mix, onion, bell pepper, and poblano chile. Cook until onion is soft and translucent, about 5 minutes.

3. Start Shakshuka
Add tomatoes and their juices to pan with vegetables. Increase heat to high to bring to a boil, then reduce heat to medium and simmer until slightly thickened, about 10 minutes.

4. Make Pesto
While tomatoes simmer, in a large bowl, stir together grated pecorino, green garlic, and 2 tablespoons olive oil. Alternatively, combine green garlic and 2 tablespoons olive oil in a blender or food processor and blend until smooth, then stir in grated pecorino. Taste and add salt and pepper as needed.

5. Bake Shakshuka
Taste shakshuka and add salt and pepper as needed. One at a time, crack 4 eggs into a small bowl, then slide gently on top of shakshuka, spacing evenly, and season with salt and pepper. Sprinkle over crumbled feta. Bake until egg whites are just set, about 12 minutes.

6. Plate Shakshuka
Drizzle shakshuka with green garlic pesto. Serve family style.
