If you live in New York and care about bagels, chances are you’ve heard about Sadelle’s. The team responsible for Parm, Torrisi, and Carbone opened up a bakery in SoHo that specializes in the breakfast staple. Managing Partner and baker Melissa Weller participated in our Road to Discovery tour, and was recently kind enough to demonstrate how to bring the Sadelle’s magic into your own kitchen. Read the instructions below to learn how to make her acclaimed Everything 2.0 bagel seed mix at home to make infused olive oil that can be used on bread, salad and much more.
1/4 cup poppy seeds
1/4 cup sesame seeds
1/4 cup dehydrated garlic
1/4 cup sea salt
1/8 cup caraway seeds
1. Cut goat cheese into a 1/4 inch slices and place it into a small jar.
2. Use a bowl to stir together seeds, garlic, and sea salt. Poppy seeds have a tendency to fall to the bottom, so be sure to mix the ingredients well.
3. Put 1/4 cup of Everything seed mix into a sauté pan, and place over medium heat briefly to bring out the flavor of the mix to better infuse it into the oil.
4. Add the mixture back into the bowl, pour a healthy amount of olive oil over the seeds. Once mixed, pour the olive oil and seed mixture over the goat cheese, add more olive oil to top it off, and let the seeds and garlic infuse into the oil.
