Rosemary Roasted Fingerling Potatoes
- ¾ pound ﬁngerling potatoes
- 1 sprig rosemary
- 1 tablespoon extra virgin olive oil
Preheat oven to 425° F. Wash potatoes and pat dry with paper towel. Cut in half lengthwise. Wash rosemary, remove leaves from sprig, and roughly chop. Place potatoes on a foil-lined baking sheet and toss with 1 tablespoon olive oil and rosemary. Roast in an even layer until fork-tender, about 30-35 minutes.
