Roast Garlic Chipotle Mashed Potatoes
- 1 large russet potato, peeled and cut into 1-inch cubes
- 2 dried chipotle chiles, rehydrated and minced
- ¼ cup milk
- 1 tablespoon butter
- 1 tablespoon roasted garlic
Peel and cut potatoes. Place in a medium pot and cover with cold, salted water. Bring to a boil and cook for 15 minutes, until easily pierced with the tip of a knife. Place the chipotles in a bowl of hot water and let sit while the potatoes cook.
When the potatoes are tender, drain them. In the pot used to cook the potatoes, warm the milk and butter. Add the potatoes back to the pot and mash with the back of a fork. Continue to mash them until they are fluffy and well combined.
Drain the chipotle peppers and mince them. Add the minced chipotles and the roasted garlic to the mashed potatoes. Stir to combine. Taste and add salt and pepper as needed. Cover to keep warm until serving.
