Red Wine Onion Marmalade

This marmalade recipe makes a great garnish for steak. Caramelized onions adds a nice sweetness while the acidity of the red wine keeps it from being too much.

Red Wine Onion Marmalade 

  • 1 tablespoon olive oil
  • 1 red onion, half thinly sliced
  • ¼ cup red wine
  • 1 tablespoon sugar
  • 1 sprig thyme, leaves only
  • salt and pepper

Heat 1 tablespoon olive oil in a medium pan over medium-high heat. Slice the onion. Add the sliced onions to the pan and sauté until soft and translucent, about 5 minutes.

Add the red wine and sugar to the onions. Reduce heat to low and simmer until almost all of the liquid has evaporated. Add 2 tablespoons water and cook until almost evaporated. Add the thyme. Taste and add salt and pepper as needed.
