What you need to do:
1. Remove dark green tops and bottom stems
2. Halve leek lengthwise
3. Cut into quarter-inch half moons
4. Transfer to bowl of cold water
5. Use hands to separate half moons
6. Allow dirt to settle
7. Transfer to paper towel to dry
