This fresh salad is a great side to any meal. Sweet-tart pomegranate seeds mixed with salty and creamy feta cheese make a refreshing combination that’s low in calories. Removing pomegranate seeds can be time consuming, but if you don’t want to take that extra step you can find them de-seeded in many grocery stores.
Pomegranate-Cucumber Salad Recipe
- ½ cucumber, halved and cut into slices
- 2 scallions, chopped
- ¼ cup cilantro, chopped
- ½ cup pomegranate seeds
- 1 lime, juiced
- ½ cup crumbled feta cheese
- 1 tablespoon olive oil
- salt and pepper
Rinse cucumber, scallions, and cilantro. Cut the cucumber in half lengthwise, scoop out the seeds, and cut into ¼-inch slices. Chop scallions and cilantro. Combine the cucumbers, scallions, cilantro, pomegranate seeds, lime juice, 1 tablespoon olive oil, and a pinch of salt. Top with crumbled feta and black pepper.
