Shrimp Pakoras with Naan and Cucumber Raita:

Pakoras—crisp Indian fritters that can be made with vegetables or protein—are usually eaten as a snack. Here, though, we’ve transformed them into a main course, battering shrimp in a batter of Madras curry and chickpea flour, then shallow-frying them and serving over toasted naan with cooling cucumber raita. This seriously bold meal will be a crowdpleaser, and you might be fighting over the last bit of sauce.

Southwestern Beef Lettuce Wraps with Crispy Tortilla Strips and Avocado:

We’re love the versatility of lettuce wraps—they seem to work with so many different ingredients! Our Southwestern beef version is a craveable, instant classic you’ll want to keep in your back pocket all summer long. Boston lettuce leaves are piled high with ancho chile–seasoned beef, diced tomatoes, black beans, and bell pepper. A garnish of crunchy tortilla strips adds a hit of texture to this main course, proving finger food can totally be an adult dinner.

Four-Cheese Pizza with Cherry Tomatoes and Basil:

In the summer time, we can never resist the combination of sweet, juicy tomatoes and fresh, fragrant basil. In this super simple recipe, pizza crust is topped with not one (or two or three) but four different types of cheese: mozzarella, Fontina, Parmesan, and provolone. Hello, cheesy heaven. The tomatoes and basil are tossed in a tangy combination of roasted garlic and balsamic vinegar, then spooned on top.

Manchego-Chicken Melts with Tomato and Herbed Aioli:

As you probably know, we’re big fans of a culinary food mashup. Here, we’re topping a traditional Spanish snack—pan con tomate—with tender chicken breasts and melty Manchego cheese. The ciabatta is slathered with plum tomato–garlic sauce first, and brought over the top with herb-laced mayo for the ultimate comfort sandy.
