For a fresh and filling lunch that will keep you going instead of slowing you down, try this crisp and tasty pasta salad. It’s a meat-free meal that has plenty of protein (from the edamame) to sustain and energize you throughout the day.
Edamame, Snap Pea and Soba Noodle Salad
- 1 cup sugar snap peas
- ½ cup edamame
- 4 ounces soba noodles
- 2 teaspoons soy sauce
- 1 tablespoon sesame oil
- 1 packet honey
- ½ inch fresh ginger, minced
Wash snap peas and trim ends. Bring a medium pot of water to a boil over high heat, then season with salt and add snap peas and edamame. Cook until bright green, about 1 minute. Use a slotted spoon to transfer vegetables to a colander and immediately rinse under cold water.
Cook Soba Noodles
Bring water in same medium pot back to a boil over high heat. Add soba noodles and cook until tender, about 2 minutes. Drain in colander and rinse under cold water.
Dress Soba Noodles
In same medium pot, now empty, combine ginger, soy sauce, sesame oil and honey. Place over medium heat and cook, stirring, until honey has dissolved, about 1 minute. Remove pot from heat, add vegetables, and soba noodles, and toss to coat. Taste and add salt and pepper as needed.
