Go Green with These Italian Broccoli Heroes

When you think of an Italian hero sandwich, two words probably come to mind: cold cuts. Well, this veggie-forward version will have you thinking less meat and more greens. Toasted, pesto-slathered French bread rolls are stacked with roasted, garlicky broccoli, tangy banana peppers, and gooey, melted mozzarella cheese. Served with a side of crunchy broccoli slaw, these vegetarian-friendly Italian Broccoli Heroes are a hearty nod to a classic.

RECIPE TIPS
Leave space between the broccoli florets on the baking sheet so that they turn crispy in the oven. If they are too close together they will steam.

INGREDIENTS
2 cloves garlic
2 heads broccoli
4 ounces fresh mozzarella cheese
2 tablespoons rice wine vinegar
5 ⅓ ounces Chobani Greek yogurt
¾ cup shredded cabbage
¾ cup shredded carrots
2 French bread rolls
3 tablespoons pesto
3 ounces roasted red peppers
2 ounces banana peppers

YOU’LL NEED
1½ tablespoons olive oil
kosher salt
black pepper
baking sheet
aluminum foil

Method

Prepare Ingredients:

Preheat oven to 450°F. Mince garlic. Rinse broccoli and cut stems off florets, keeping the stems separate. Halve broccoli stems lengthwise. Thinly slice mozzarella.

Roast Broccoli:

On a baking sheet, toss broccoli florets and stems with 1½ tablespoons olive oil, ½ teaspoon salt and pepper as desired. Arrange in a single layer, keeping florets and stems separate (see Recipe Tip). Scatter garlic over broccoli stems. Transfer to oven and roast until florets are crisp and stems are tender, 15–18 minutes.

Make Slaw:

While broccoli roasts, in a large bowl, whisk together rice vinegar and ¼ cup yogurt. Add slaw mix and toss to coat. Season with ½ teaspoon salt and pepper as desired. Save remaining yogurt for your morning granola.

Chop Broccoli Stems:

Once broccoli is roasted, thinly slice stems lengthwise and add to bowl with slaw, tossing to coat in dressing.

Assemble Heroes:

Line baking sheet from broccoli with foil. Slice bread rolls open lengthwise without cutting all the way through. Spread pesto inside rolls, then layer on broccoli florets, roasted red peppers, banana peppers, then mozzarella. Place heroes on baking sheet and return to oven until bread is toasted and mozzarella is melted, about 5 minutes.

Plate Heroes:

Close heroes and serve with broccoli slaw. Dig in!
