Homemade Ricotta
in 3 Simple Steps

Ricotta is a delicious, creamy cheese that goes with everything — pancakes, lasagna, ravioli, crostini or even just scooped on a spoon! It’s also incredibly easy to make. With a few basic ingredients, you’ll be making ricotta like a cheese monger!

What you’ll need for this easy recipe:

  • A sieve
  • Cheesecloth
  • A large bowl
  • A medium sauce pot
  • A wooden spoon


  • 2 quarts whole milk
  • 1 cup heavy cream
  • ½ teaspoon salt
  • 3 tablespoons lemon juice

First, line the sieve with the cheesecloth and lay it over a large bowl.

Next, heat the milk and salt in a medium sauce pot over medium heat, stirring occasionally to prevent it from burning at the bottom. When it comes to a boil, add lemon juice.  Reduce to a simmer for 2 minutes. When curds start to form, remove from heat. Let stand for about 15 minutes.

Finally, pour the mixture through the sieve lined with cheesecloth and let drain for about 1 hour. Discard the liquid.

What’s left in the cheesecloth is your beautiful, homemade ricotta.  Season with additional salt if necessary and enjoy!

For an extra kick of flavor, spread on toasted bread and top with honey, lemon zest, and sea salt.
