Grilled Skirt Steak Recipe
- 2 5-ounce skirt steaks
- salt and pepper
Heat a cast iron pan or grill pan over high heat. Pat steak dry with paper towel and generously season it with salt and pepper. When pan is smoking, add the steak. Allow to cook without moving until well-browned and medium-rare in the middle, about 2-3 minutes per side.

(Note: The USDA recommends cooking steak to 145° F.)
