In the summer, we try our best to grill pretty much everything. And yes, that includes dessert. Don’t stop at burgers and veggies—your grill is begging you to throw on some pineapple slices. Your summer dinner is about to get a serious upgrade with these delicious, fruit-focused grilled desserts.
Yogurt Parfait with Grilled Pineapple
While this is technically on our dessert menu, the word “parfait” ought to mean that you could have it for breakfast too, right? The natural sugars in pineapple make it ideal for grilling—and help pull out its sweetness while adding a smoky flavor. Layered between whipped Greek yogurt and cream, cashews and mint, this parfait is perfectly cool, crunchy and creamy anytime of the day.
1 container Chobani Greek yogurt
3 tablespoons honey, divided
½ cup heavy cream
5 ounces cubed pineapple
2 tablespoons cashews
1 sprig Mint Fresh
In a medium bowl, stir together Greek yogurt and 1 packet honey. In a separate large bowl, using a whisk or electric mixer, whip heavy cream until the mixture holds soft peaks. Gently fold yogurt mixture into whipped cream. Place mixture in freezer to chill, about 10 minutes.
While yogurt chills, quarter pineapple cubes and place in a bowl. Add remaining honey and stir to combine. Grill over medium-high heat and allow pineapple to char, without moving, about 4 minutes. Flip and continue cooking until grilled on both sides and tender, about 3 minutes. Remove pan from grill and set aside to cool slightly, 3-5 minutes.
While pineapple grills, roughly chop cashews. Rinse mint and roughly chop leaves, discarding stems. In a small bowl, stir together cashews and mint.
Divide 1/3 of yogurt mixture evenly between 2 parfait glasses, short, wide glasses, or bowls. Top with 1/3 of grilled pineapple, followed by 1/3 of cashew mixture. Repeat layers. Serve immediately or chill in fridge, up to 1 hour.
Grilled Nutella S’mores Pizza
Yes, you read that right: Nutella S’mores Pizza. We made all our chocoholic dreams come true with this supremely decadent dessert that’s a snap to prepare. Crisp pizza crust is smothered in Nutella and marshmallows and can be grilled (instead of baked!) until the perfect level of gooey and melty. And, in case your quota wasn’t reached, there’s a liberal drizzle of melted chocolate at the end along with a sea salt sprinkle for a sensational salty-sweet finish.
Grilled Pound Cake
Simply butter slices of pound cake before putting them on either an outdoor or indoor stovetop grill, and let them get a little char. It’s literally that simple.
1 pound cake, sliced into 1-inch thick pieces
6 tablespoons unsalted butter, melted
Preheat a grill or grill pan to medium-low. Brush the pound cake slices with melted butter. Grill until the cake is toasted, about 2 minutes on each side. Add ice cream or berries if your heart desires. Eat.
Grilled Summer Fruit
6 peaches, cut into .5-inch dice
1 pt. strawberries, halved
1 pineapple, cut into large cubes
8 skewers, soaked in water for 20 minutes
Extra-virgin olive oil, for drizzling
Honey, for drizzling
Preheat grill to medium-high. Skewer peaches, strawberries, and pineapple. Drizzle with olive oil and season with salt. Grill, turning occasionally, until fruit is tender and slightly charred, 10 to 12 minutes. Drizzle with honey.
