Cashew Snack Mix

This mix of toasted cashews and golden raisins is a perfect appetizer or snack mix. We typically double the recipe and keep it on hand for week-long snackability!

Golden Curry Cashew Snack Mix Recipe

  • 2 cups cashews
  • 1 cup golden raisins
  • 2 teaspoons curry powder
  • ¼ teaspoon cayenne pepper
  • 2 teaspoons vegetable oil
  • Salt

Put the vegetable oil in a large skillet over medium heat. When hot, add the cashews, golden raisins, curry powder, cayenne and a sprinkle of salt.

Cook, stirring occasionally, until the cashews are slightly toasted and the curry powder is fragrant, about 5 to 6 minutes.

Transfer to a serving bowl, serving warm or at room temperature.

Pro tip: Store in an airtight container to keep fresh for up to 2 weeks!
