Golden Curry Cashew Snack Mix Recipe
- 2 cups cashews
- 1 cup golden raisins
- 2 teaspoons curry powder
- ¼ teaspoon cayenne pepper
- 2 teaspoons vegetable oil
Put the vegetable oil in a large skillet over medium heat. When hot, add the cashews, golden raisins, curry powder, cayenne and a sprinkle of salt.
Cook, stirring occasionally, until the cashews are slightly toasted and the curry powder is fragrant, about 5 to 6 minutes.
Transfer to a serving bowl, serving warm or at room temperature.
