Fall is here, and that means football! Your game day doesn’t have to be plain ol’ burgers & chips – Take your munchies to the next level with sliders topped with caramelized onions and homemade vegetable fries. Sound a little to healthy? Add some melty gruyere cheese to your sliders to make this snack a little more indulgent!
Game Day Sliders with Parsnip and Carrot Fries
Appetizers for 6 or dinner for 2
- 10 ounces ground beef
- 1 onion, thinly sliced
- 6 small buns
- 2 parsnips, peeled and cut into 2″ strips
- 1 carrot, peeled and cut into 2″ strips
- 1 tablespoon butter
- Olive oil
- Salt and pepper
Preheat the oven to 375°F. In a medium sized skillet, heat 1 teaspoon olive oil and butter over medium-high heat. When the foam of the butter subsides, add onions, let brown, stirring occasionally about 10 minutes. Add 2 tablespoons water. Stir to scrape the brown bits on the bottom of the pan, reduce heat and continue to cook until the onions are soft and brown with no remaining liquid, about 10-15 minutes. Season with salt.
Toss parsnips and carrots with 2 tablespoons olive oil and season with salt and pepper. Spread out evenly on a baking sheet, making sure none of the vegetables overlap. Bake at 375° F for about 30 minutes or until the carrots and parsnips are tender and slightly caramelized.
Meanwhile, divide meat into 6 portions. Form a small patty from each portion and season with salt and pepper. Heat 1 tablespoon olive oil a grill or sauté pan over high heat. When hot, add burgers to pan. Cook for 3 minutes on each side for medium doneness. Toast buns, if desired. Place burgers on buns and top with caramelized onions.
