Does anything scream Sunday morning more than eggs, bacon, and potatoes? Here, we give this classic breakfast combo a cheffy twist with frico the Italian word for crispy cheese wafer, which we make using layers of shredded white Cheddar. The new brunch spot in town? Your place.
Frico Fried Eggs with Bacon and Rosemary Potatoes
⅛ ounce chives
⅛ ounce rosemary
12 ounces red-skinned potatoes
1 yellow onion
2 cloves garlic
8 ounces bacon ounces
2 shredded white Cheddar cheese
1. Preheat oven to 450ºF. Rinse all produce. Strip rosemary leaves, discarding stems, then mince. Thinly slice chives. Cut potatoes into ½-inch pieces. Peel onion, halve, and thinly slice. Roughly chop garlic.
2. On a baking sheet, toss rosemary, potatoes, onion, and garlic with 2 tablespoons olive oil, ½ teaspoon salt, and pepper as desired. Arrange in a single layer, spacing apart as much as possible. Roast, stirring halfway through, until potatoes are tender and onion is soft, 18–23 minutes total.
3. While potatoes roast, in a large nonstick pan, arrange bacon in a single layer, then place over medium heat. Cook until bacon is crisp and curling at the edges, 3–5 minutes per side. There’s no need to add oil when cooking bacon—its natural fat will be released as it cooks. Stand back to cook the bacon in case of splatters, and work in batches as needed. Note that the second side of the bacon, as well as later batches, may cook more quickly since the oil’s already hot. Using tongs or a fork, transfer bacon to a paper towel–lined plate to drain; cover with foil. Discard almost all excess fat from pan, leaving behind a thin layer for the next step. Pouring melted fat down the drain might damage your pipes. Instead, pour it into a heatproof container or bottle once it’s cooled slightly, and dispose in the garbage.
4. In pan from bacon, sprinkle white Cheddar in an even layer. Return pan to medium heat and cook, without stirring, until cheese begins to melt, 1 minute. Crack eggs into pan on top of cheese and season with ¼ teaspoon salt and pepper. Cover pan; fry until whites start to set, 3 minutes. Uncover pan; increase heat to medium high. Continue frying until cheese is golden, egg whites are mostly set, and yolks are still runny, 3–4 minutes more.
5. Divide rosemary potatoes between serving plates and top with frico fried eggs. Add bacon to plates and garnish everything with chives and pepper as desired.
