Dijon Mustard Potato Salad

This is a lighter, healthier version of a classic potato salad. Swapping out mayonnaise for mustard adds extra flavor and eliminates a lot of calories. Once you try this low fat potato salad, you’ll never go back to the mayonnaise version again.

Dijon Mustard Potato Salad Recipe

Time: 35 minutes


  • ½        pound red new potatoes
  • 1          shallot, thinly sliced
  • 2          teaspoons Dijon mustard
  • 1          teaspoon whole grain mustard
  • 1          tablespoon champagne vinegar
  • 1          tablespoon extra virgin olive oil
  • 2          tablespoons parsley, chopped
  •             kosher salt
  •             black pepper

Cut the potatoes in half and place them in a medium pot. Cover with cold water and bring to a boil. Add a generous pinch of salt and boil until the potatoes are easily pierced with the tip of a knife. Drain.

Toss the potatoes with sliced shallot, Dijon mustard, whole grain mustard, champagne vinegar, olive oil, and chopped parsley.

Taste and add salt and fresh ground pepper as needed. Serve warm or cold.
