Collard greens are often underrated, which is why we’re showcasing them in this week’s menu.

Collard greens are members of the underrated cabbage family, a staple vegetable in southern cooking. Aptly, the leaves taste like a cross between their cabbage relative and hearty kale. While collards are available in most stores year-round, their peak season falls somewhere between January and April.

You can sample them this week if you’ve ordered the Black Eyed Peas with Sweet Potatoes and Collard Greens. The ingredient is known to signify good luck in the South—perfect timing for New Years around the corner.
