How to Make Chicken Avocado Burgers with Aioli


Make boring chicken dinners a thing of the past. This creative recipe rethinks one of the most popular proteins, putting it in burger form. Patties made from ground chicken, avocado, and garlic are seared, then topped with more avocado and drizzled with a lemony yogurt aioli sauce. A side of green beans brings this wholesome dinner together in perfectly verdant harmony.
RECIPE TIPS
Incorporate burger ingredients without crushing them; using your hands prevents over mixing and ensures a softer touch.
USDA recommends cooking chicken to 165°F.

INGREDIENTS
1 avocado, divided
12 ounces ground chicken
2 cloves garlic
1 lemon
8 ounces green beans
1⁄4 teaspoon coarse Maldon sea salt
2 tablespoons Chobani nonfat Greek yogurt
2 tablespoons mayonnaise
2 brioche buns

YOU’LL NEED
2 tablespoons olive oil
kosher salt black pepper
10″ medium nonstick pan
10″ medium pan
INSTRUCTIONS
1. Prepare Ingredients
Halve avocado and discard pit. Using a spoon, carefully scoop out flesh, discarding skin. Roughly chop 1⁄2; thinly slice remainder. Mince garlic. Halve lemon. Rinse green beans and trim ends.

2. Form Burgers
Pat chicken dry with paper towel and place in a medium bowl. Add chopped avocado, 1⁄2 of garlic, 1⁄2 teaspoon kosher salt, and pepper. Using your hands, mix well (see Recipe Tip). Divide mixture evenly and form into 2 patties, about 1-inch thick.

3. Sear Burgers
Heat 1 tablespoon olive oil in a medium nonstick pan over medium heat. When oil is shimmering, add burgers and sear until browned on bottom, 6-7 minutes. Flip, cover pan, and sear until cooked through, 6-7 minutes more. Transfer to a plate and set aside.

4. Sauté Green Beans
While burgers sear, heat 1 tablespoon olive oil in a separate medium pan over medium heat. When oil is shimmering, add green beans and sauté until bright green, about 4 minutes. Remove pan from heat. Squeeze over juice of 1⁄2 lemon. Sprinkle over Maldon sea salt.

5. Make Aioli
While green bean sauté, whisk together Chobani yogurt, mayonnaise, juice of remaining 1⁄2 lemon, and remaining garlic in a small bowl. Taste and add salt and pepper as needed. Halve buns crosswise. Wipe pan from burgers clean, add buns cut-side down over medium heat, and toast until light golden, 2-3 minutes. Use remaining lemon to brighten a glass of water.

6. Plate Burgers
Top bun bottoms with burgers, then aioli, then sliced avocado. Finish with bun tops and serve with sautéed green beans alongside. Enjoy!
