‘Tis the Season: Jen’s Cheese-Walnut Puffs

RECIPE TIP: If you don’t have a pastry bag at hand, use a large resealable plastic bag! Snip the tip off 1 corner and fill it with the dough as you would with a pastry bag—and pipe away.

1 cup water
1 stick unsalted butter (aka .5 cup, 113 grams, or 8 tablespoons)
1 tablespoon roughly chopped fresh thyme
.5 teaspoon kosher salt
a few grinds black pepper
1 cup all-purpose flour
4 eggs
2 cups crumbled feta cheese (or any crumbly type you fancy)
1 cup shredded Gruyère cheese
.25 cup chopped walnuts

1. Start Dough: Preheat oven to 400 degrees F. In a medium pot over high heat, combine water, butter, thyme, salt, and pepper and bring to a boil. Immediately add flour and cook, stirring continuously, until mixture pulls away from sides of the pot, 1–2 minutes. Remove pot from heat and set aside to cool for about 10 minutes.

2. Finish Dough: Add 4 eggs, one at a time, to pot with cooled flour mixture. Stir to fully combine. Stir in feta, Gruyère, and walnuts. Transfer dough to a pastry bag (see Recipe Tip) and pipe 1-inch mounds onto a parchment-lined baking sheet, spacing about 1 inch apart.

3. Bake Puffs: Transfer puffs to center rack of oven and bake, rotating baking sheet halfway through, until light golden and firm, about 20 minutes total. Ditch the dinner rolls and enjoy these instead!
