Carrot-Citrus Hash Recipe

1 yellow onion
12 ounces carrots
1 orange
1 lemon
1 tablespoon olive oil
2 tablespoons water
1 teaspoon butter
kosher salt
black pepper

Peel and chop onion and carrots into ½-inch dice. Juice orange and lemon into a small bowl.

Heat olive oil over medium-high heat and sauté onions until lightly caramelized (golden brown in color), about 5 minutes. Add diced carrots plus 2 tablespoons water and sauté until tender, about 10 minutes more. Add citrus juices and cook for 2 minutes. Stir in butter and remove from heat. Taste and add salt and pepper as needed.
