The Caramel Rocky Road Bars of Your Dreams

Ooey, gooey, and endlessly delightful, these rocky road bars combine many of our favorite sweet treats: chocolate, marshmallows, and melty caramel. Pro tip: Assemble the bars and pop ’em in the oven before you eat dinner, then set aside to cool and they’ll be ready by the time you’re craving dessert!

You’ll Need
2 eggs
kosher salt
baking sheet

Ingredients
¼ cup unsalted butter, divided
5 caramel squares, divided
¾ cup dark brown sugar
1 cup flour
½ teaspoon baking powder
⅓ cup semisweet chocolate chips, divided
⅓ cup white chocolate chips, divided
½ cup mini marshmallows, divided
1 8″ square aluminum tin

Recipe Tips
This recipe calls for an egg and yolk to achieve the perfect dense, gooey, moist texture.

Instructions

1. Prepare Ingredients

Preheat oven to 350°F. Rub ½ teaspoon butter inside aluminum tin, reshaping tin if bent. Separate 1 egg, placing yolk in a small bowl and discarding white (see Recipe Tip). Crack remaining whole egg into bowl with yolk. Place remaining butter in a medium heatproof bowl and microwave in 30-second intervals until completely melted. Alternatively, in a small pot, melt butter over medium heat, then pour into a medium bowl. Unwrap caramel squares and quarter.

2. Make Batter

Add sugar to bowl with melted butter and whisk vigorously to fully combine. Add 1 egg and egg yolk to bowl with butter mixture and whisk until fluffy. Add flour, baking powder, and ½ teaspoon salt. Stir in half of semisweet chocolate chips, half of white chocolate chips, half of marshmallows, and half of caramel squares.

3. Assemble Bars

Place prepared tin on a baking sheet and pour in batter, spreading in an even layer. Sprinkle over remaining semisweet and white chocolate chips, remaining marshmallows, and remaining caramel squares in an even layer.

4. Bake Bars

Bake bars until center is set and sides start to pull away from tin, 15-20 minutes.

5. Plate Bars

Remove bars from oven and set aside until cool enough to handle, 5-7 minutes. Lift out of pan and transfer to a baking sheet or cutting board. Cut into 9 square pieces. Enjoy caramel rocky road bars warm or at room temperature. Refrigerate leftovers in an airtight container for up to 3 days.
