We love the sweet orange flesh roasted or boiled, and with a ton of diverse seasonings. Here, we’re taking a trip around the world with squash, and using it in a variety of global cuisines. Butternut Squash and Poblano Enfrijoladas
Similar to enchiladas, Mexican enfrijoladas is a decadent dish involving tortillas wrapped around various delicious ingredients and topped with a hearty, creamy black bean sauce. In our recipe, sweet butternut squash cubes get roasted with poblano chile and onion, combined with Monterey Jack cheese and tomato salsa, and stuffed into tortillas. Smothered in black bean sauce, our enfrijoladas are a sensational way to showcase seasonal squash.
Pan-Roasted Chicken with Butternut Squash Panzanella
Panzanella is a traditional Italian salad of bread cubes and tomatoes that hails from the region of Tuscany. In this seasonal twist, butternut squash chunks are boiled ’til tender, then tossed with parsley, onion, and cubes of toasted baguette in a zingy shallot–sherry vinegar dressing. Served with pan-roasted chicken, this squash-filled salad may just give tomatoes a run for their money.
Prosciutto and Butternut Squash Pizza
Instead of classic marinara, we’re topping pizza crust with butternut squash, which is first roasted with chili powder, olive oil, salt, and pepper, and then mashed! Paired with a winning combo of mozzarella and Provolone cheeses in addition to kale, caramelized onion, and salty prosciutto, this is a topknotch pizza, that’s for sure.
Moroccan Chicken Stew with Couscous and Butternut Squash

Crushed red pepper—roasted butternut squash and onions add sweetness to this addictive twist on takeout favorite, sesame noodles.
