Basil-Radish Rice Recipe with Soy Dressing
- ¾ cup white jasmine rice
- 6 radishes, halved and thinly sliced
- 10 basil leaves, cut in a chiffonade
- 4 scallions, thinly sliced
- 2 tablespoons rice vinegar
- 1 teaspoon sugar
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
Place rice and 1¼ cups of water in a medium pot over a medium heat. Bring to a boil and cover., Reduce heat to low and continue to cook, covered, for another 12 minutes. Remove from heat and allow to rest, covered, while slicing radishes, basil and scallions.
In a medium mixing bowl, combine the vinegar, sugar, olive oil, sesame oil, and soy sauce. Whisk to combine.
Add the cooled rice to the soy-vinegar mixture along with the sliced radishes, basil, and scallions.
