These aren’t your average sliders. Bacon-wrapped pork tenderloin, crisped in a skillet then roasted to perfection on a tiny brioche bun is the most delicious mouthful of goodness. Make sure you taste test before putting these out on the appetizer table, because they’ll be gone before you know it!
Bacon-Wrapped Pork Tenderloin Sliders
Makes 12 sliders
- 1 pork tenderloin, about ¾ pound
- 4 slices bacon, cut in half crosswise
- 12 slider brioche buns, warmed
- 1 tablespoon olive oil
- 3 tablespoons whole grain mustard
- 3 tablespoons mayonnaise
- salt and pepper
Heat the oven to 350° F. Sprinkle the tenderloin generously with salt and pepper, and wrap it with the bacon slices, securing the loose ends with toothpicks. Put the olive oil in a large oven-proof skillet over medium-high heat. When hot, add the tenderloin and cook, turning as necessary, until the bacon is starting to crisp all over, 5 to 6 minutes.
Move to Oven
Transfer the skillet to the oven and cook, turning once halfway through, until the bacon is crisp and the tenderloin is just cooked through (a thermometer inserted into the center should register 145° F), 15 to 20 minutes.
Transfer the tenderloin to a cutting board and let it rest for about 5 minutes. Cut it into 12 slices and serve on the buns with a little mayonnaise and whole grain mustard.
