While we’re not prepared to get inked, we understand where the girl’s coming from. Creamy, satisfying, and infinitely versatile, avocado is delicious peeled and eaten on its own, but also makes for an irresistible meal or snack when you add bread to the picture.
With growing interest in cleaner eating, it’s no wonder hearty avocado toast has become insanely popular, appearing on restaurant menus across the country. The good news? It’s a cinch to whip up a completely personalized version of rich avocado spread on warm, crisp bread. With only a few ingredients plus your favorite garnishes, you can go green this month with some toasty perfection. Here is a basic equation to help you fulfill your avocado toast destiny. AVOCADO + LEMON JUICE + BREAD + OLIVE OIL = AVOCADO TOAST BLISS
1 very ripe avocado
2 slices bread of your choice
olive oil for drizzling
optional garnishes: crispy bacon, any variety of cheese, crushed red pepper, dukkah, sesame seeds, etc.
If your avocado isn’t ripe enough for its toasty moment, place it inside a paper bag, fold the bag close, and set it aside for 1–2 days before using.
1. Make Avocado Mash: Halve avocado and discard pit. Using a spoon, carefully scoop out flesh, discarding skin. Transfer to a medium bowl. Add 1–2 squeezes lemon juice as desired. Season with ¼ teaspoon kosher salt and pepper as desired. Using the back of a fork, mash until mostly smooth. Taste and add more salt and pepper as needed.
2. Toast Bread: Add bread slices in a single layer to a medium pan over medium heat. Toast until lightly golden, 2–3 minutes per side. Alternatively, toast bread in a toaster oven.
3. Assemble Avocado Toasts: Place toasted bread on a clean dry surface. Spread avocado mash over 1 side of each slice and drizzle over as much olive oil as desired. Add any optional garnishes and dig in.
