How to Make Avocado Mousse to Celebrate St. Patrick’s Day

You don’t have to be Irish to celebrate St. Patrick’s Day with these sweet green treats. Inspired by classically decadent chocolate mousse, this creamy avocado version is at once rich and light, making them perfectly festive.

INGREDIENTS
2 very ripe avocados
2 tablespoons superfine sugar
½ cup heavy cream
1 tablespoon powdered sugar
chocolate shavings (optional)

EQUIPMENT
fine-mesh strainer

Yields 3 servings

INSTRUCTIONS
1. Whip Heavy Cream: In a chilled medium bowl, whisk together heavy cream and powdered sugar until slightly thickened and soft peaks form. Place in refrigerator to chill until ready to use.

2. Prepare Avocados: Halve avocados and discard pits. Using a spoon, carefully scoop out flesh, reserving skins. Place in a fine-mesh strainer set over a large bowl and using the back of a spoon, push avocados through strainer completely. Add superfine sugar and stir to fully combine.

3. Prepare Avocado Mousse: Gently fold whipped cream into avocado mixture until fully combined. Spoon into small bowls, glasses, or the hollowed-out avocado skins. Garnish with chocolate shavings if you like and enjoy for St. Patrick’s Day!
