You don’t have to be Irish to celebrate St. Patrick’s Day with these sweet green treats. Inspired by classically decadent chocolate mousse, this creamy avocado version is at once rich and light, making them perfectly festive.
2 very ripe avocados
2 tablespoons superfine sugar
½ cup heavy cream
1 tablespoon powdered sugar
chocolate shavings (optional)
Yields 3 servings
1. Whip Heavy Cream: In a chilled medium bowl, whisk together heavy cream and powdered sugar until slightly thickened and soft peaks form. Place in refrigerator to chill until ready to use.
3. Prepare Avocado Mousse: Gently fold whipped cream into avocado mixture until fully combined. Spoon into small bowls, glasses, or the hollowed-out avocado skins. Garnish with chocolate shavings if you like and enjoy for St. Patrick’s Day!
