Apple Crisp with Spiced Pecans


Gala apples, a cross between Orange Red apples and Golden Delicious apples, are sweet, juicy, and crisp. Their firmer texture makes them ideal for holding their shape while baking.

Total time: 30-40 minutes

1 ounce flour
2½ tablespoons raw oats
¼ ounce light brown sugar
2 tablespoons butter
¾ ounce chopped pecans
¼ ounce chili powder
2 gala apples
¼ teaspoon ground cinnamon
1 tablespoon granulated sugar
1 pinch kosher salt

1. Prepare Ingredients
Preheat oven to 375F. In a medium bowl, combine flour, oats, brown sugar, a pinch salt, and 3 packets butter. Mix by hand until fully combined and all flour has been incorporated. Place in refrigerator to chill while roasting pecans.

2. Roast Pecans and Prepare Apples
On a baking sheet, toss pecans with chili powder. Arrange in a single layer and bake until golden brown and fragrant, 5-7 minutes. While pecans roast, rinse apples, halve, and remove and discard core and stem. Cut apples into .25-inch dice. In a medium bowl, combine apples, cinnamon, and white sugar. Add roasted pecans and stir to combine.

3. Bake Crisp
Reshape tin if bent. Grease tin with .5 of remaining packet butter. Pour apple mixture into tin, then sprinkle topping evenly over. Discarding remaining .5 packet butter. Place tin on baking sheet from pecans. Bake until juices are bubbling and topping is golden brown and crisp, 25-30 minutes.
